ORZO WITH BABY SQUID

 

Ingredients

250 gr. Orzo (Pasta)
10 baby squid
1 large dry onion
2 large tomatoes skin and seeds removed
1/2 cup chopped parsley
2 Tbsp. spring onions or chives thinly sliced
3 cups vegetable clear stock
3 Tbsp. tomato juice
1 bay leave
1 glove of garlic
1 cup olive oil
salt and pepper to taste

In a deep sauce pan sauté the onion, garlic, tomato, bay leave and baby squid in olive oil
Add the orzo and continue to stir over moderate heat
Simmer down with the vegetables stock
Add a 3 Tbsp tomato juice
Add some stock little at the time till the orzo is cooked
By the end add the chopped parsley and spring onion
Remove from the stove and let it relax for 3 minutes

Served with freshly ground black pepper and hot olive oil
